Method
Prepare the pears
Heat the oven to 190°C (375°F). Choose four medium ripe but firm pears, about 800 g in total. Wash, halve lengthways and scoop out the cores; leave the skins on. Wash the lemon and squeeze 1 tbsp juice. Set the eight pear halves cut-side up in a baking dish that holds them in one layer.
Bake until tender
Mix the lemon juice, water, cinnamon and 2 tbsp honey, then pour around and over the pears. Divide the butter into eight small pieces and place one in each pear hollow. Cover the dish with foil and bake for 20 minutes. Uncover, baste with the juices and bake for another 15–25 minutes until a knife slides easily through the thickest part. Add a small splash of water only if the dish is drying out.
Mix and serve
Stir the remaining 1 tbsp honey into the yogurt and keep refrigerated. Let the pears stand for 5 minutes, then serve two halves per person with one-quarter of the yogurt and a spoonful of the warm pan juices. Refrigerate leftovers promptly in separate covered containers.
Pear ripeness matters more than the clock: very firm pears may need longer. This simple fruit dessert is an original addition to the Georgian-inspired menu, not a named traditional dish.
