Allergen notes
Walnuts and wheat in bread; check bread for other allergens. Check wine vinegar for sulphites.
Method
Prepare the beans and nuts
Wash the produce. Drain and rinse the beans from two 400 g cans; aim for about 480 g drained beans. Dice the onion and mince the garlic. Toast the walnuts in a dry 22 cm saucepan over medium-low heat for 3–4 minutes, stirring often. Transfer to a board and chop finely.
Soften the onion
Add the oil and onion to the saucepan. Cook over medium heat for 7 minutes until softened. Add the garlic, coriander and chili flakes and stir for 30 seconds.
Make a thick bean pot
Add the drained beans, water, salt and black pepper. Bring to a simmer and cook uncovered for 10 minutes, stirring occasionally. Mash about one third of the beans against the pan with a wooden spoon. Stir in the walnuts and simmer gently for 3 minutes; the mixture should be spoonable rather than dry.
Brighten and serve
Chop the cilantro. Stir the vinegar and most of the cilantro into the beans off the heat. Spoon into two bowls, scatter over the remaining cilantro and serve with the bread.
The stated bean weight is the canned weight before draining. Use fully cooked canned beans here, not raw or soaked dried kidney beans.
