Method
Quick-pickle the cucumber
Stir the vinegar, sugar and a pinch of salt until dissolved. Add the thinly sliced cucumber and set aside for at least 15 minutes.
Whip the feta
Blend or whisk the feta, yogurt and lemon juice until smooth and spreadable.
Shape the patties
Gently mix the lamb, rosemary, garlic, cumin, salt and pepper, without overworking it. Form two patties about 2 cm thick, slightly wider than the buns, and press a shallow dimple into the centre of each. Keep raw-meat tools separate.
Cook the patties
Heat the oil in a cast-iron pan or grill over medium-high heat. Cook the patties 4–5 minutes per side, until well browned. Check the centre of each patty with a food thermometer: ground lamb must reach 71°C (160°F). Rest 2 minutes on a clean plate.
Toast the buns
Toast the buns cut-side down in the pan for 30–60 seconds until golden.
Assemble
Spread whipped feta on both bun halves. Add arugula, the lamb patty and a layer of drained pickles, then top with the bun lid.
