Method

1

Prepare the orange

Wash and dry the orange. Finely grate the zest from half the fruit, avoiding the white pith. Reserve half the zest for serving. The remaining orange flesh can be saved for another use; this recipe uses only the zest.

2

Cook gently

Sift the cocoa into a small heavy-bottomed saucepan. Gradually whisk in the whole milk until smooth, then stir in the condensed milk, butter and salt. Cook over medium-low heat for 8–12 minutes, stirring and scraping the corners constantly, until glossy and thick enough to coat a spoon heavily. Stop while it still flows slowly; it should not reach a firm rolling consistency.

3

Portion and finish

Take off the heat and stir in half the orange zest. Divide into four small heatproof cups. Let cool for 15 minutes, then scatter with the reserved zest and serve warm with teaspoons. To serve later, refrigerate within 2 hours and use within 3 days; the mixture becomes thicker when cold.

Use a low flame and keep the spoon moving. These are rich, small spoon sweets rather than large bowls of pudding.
