Method

1

Check the pearls

Use small cooking tapioca pearls, not large bubble-tea pearls or instant tapioca. Check the packet for any required pre-soaking and follow it if needed; that soaking time is additional. Peel the bananas and cut into 1.5 cm slices; the listed 300 g is peeled weight.

2

Cook the tapioca

Bring 300 ml of the measured water to a boil in a heavy saucepan. Add the pearls while stirring, reduce to a low simmer and cook for 12–18 minutes, stirring frequently so they do not stick. They should be mostly translucent with only tiny white centres; follow a longer package cooking time if needed. Add the remaining 50 ml water if the mixture becomes too thick before the pearls soften.

3

Add the coconut and banana

Stir in the coconut milk, sugar and salt. Simmer gently for 5–8 minutes, stirring, until the pearls are translucent and tender, then add the banana slices and cook for 3–4 minutes more until warmed and slightly softened. The pudding should be spoonable and loose; it thickens as it stands.

4

Toast and serve

Meanwhile, stir the sesame seeds in a small dry pan over medium-low heat for 2–3 minutes until lightly golden. Remove them from the hot pan. Let the pudding stand for 5 minutes, divide among four bowls and sprinkle with sesame. Refrigerate leftovers within 2 hours; loosen with a splash of water when reheating.

Choose ripe but still firm bananas so the slices hold together. If the pearl package calls for soaking, plan that time before starting.
