Method
Prep toppings
Wash lettuce and tomato; slice tomato. Mix mayonnaise, ketchup and mustard. Divide beef into two loosely packed balls. Keep raw-meat tools separate.
Sear safely
Heat a heavy pan over medium-high heat. Add beef balls and flatten firmly with a sturdy spatula into thin patties. Season with salt and pepper. Cook about 3–4 minutes, turn, and continue until each centre reaches 71°C (160°F) on a food thermometer inserted from the side.
Melt and toast
Place cheddar on cooked patties and cover briefly to melt. Transfer with clean utensils. Toast cut sides of buns in a separate clean pan.
Build
Spread sauce on buns. Add lettuce, patties, tomato and pickles. Close and serve.
A wide spatula makes flattening easier. Do not judge burger doneness by colour alone.
