Method
Prepare the orange and rice
Wash the orange well. Finely grate only the coloured outer skin of the half orange to obtain 1 tsp zest, avoiding the bitter white pith; save the flesh for another use. Briefly rinse and drain the rice. Put it in a medium heavy-based saucepan with 250 ml of the water and the salt.
Soften the grains first
Bring to a boil, reduce to the lowest heat and cover. Cook for 12–15 minutes until the water is mostly absorbed and the rice has softened but may still have a small firm centre. If it dries before the grains soften, add some of the reserved 50 ml water.
Simmer gently in milk
Add the milk, orange zest and 0.25 tsp of the cinnamon. Bring back to a gentle simmer, then cook uncovered over low heat for 20–25 minutes, stirring every 1–2 minutes and scraping the base and corners so it does not scorch. The rice must become completely soft with no hard centre; continue cooking if needed, using any remaining reserved water to keep it loose.
Sweeten and plump the raisins
Stir in the condensed milk and raisins. Simmer gently for another 5–7 minutes, stirring often, until the raisins plump and the mixture is creamy but still falls slowly from the spoon. Remove from the heat and stir in the vanilla. It will thicken as it stands.
Rest briefly and serve
Rest for 5 minutes, then divide among four small dessert bowls. Dust evenly with the remaining 0.25 tsp cinnamon and serve warm. For leftovers, transfer promptly to shallow containers and refrigerate within 2 hours, loosely covered until cold, then seal; use within 2 days. Do not leave a large pot of cooked rice to cool on the counter.
Use ordinary uncooked long-grain white rice, not instant rice. Condensed milk is sweetened and is not interchangeable with unsweetened evaporated milk. This lighter house pudding uses whole milk and has no egg, coconut or alcohol.
