Method

1

Make a cold slurry

Set out four heatproof dessert bowls, each holding at least 200 ml. In a small bowl whisk the cornstarch into 100 ml of the cold milk until completely smooth.

2

Warm the coffee milk

Put the remaining 450 ml milk, cream, sugar, instant coffee, cardamom and salt in a medium heavy-based saucepan. Heat over medium-low heat for about 6–8 minutes, stirring and scraping the base, until the sugar and coffee dissolve and the milk is steaming with bubbles around the edge.

3

Thicken without scorching

Whisk the slurry again, then pour it into the hot milk in a thin stream while whisking continuously. Continue over medium-low heat until the pudding thickens and slow bubbles break across the surface. Cook at this gentle bubbling stage for 1 full minute, whisking into the corners and across the base. Remove from the heat and stir in the vanilla.

4

Portion and chill

Divide evenly among the four bowls, about 160–170 ml each. Let steam escape for 15 minutes, then refrigerate; do not wait for the pudding to become cold on the counter. Once chilled, cover. Chill for at least 4 hours until softly set. Serve cold with no extra topping, and keep refrigerated until needed. Use within 2 days.

Use soluble instant coffee granules, not ground coffee. This is a spoonable pudding, not a firm unmoulded dessert. Ground cardamom here means ordinary green cardamom, not Ethiopian korarima.
