
Lemon & dill salmon
A simple salmon supper with roasted green beans, fresh dill and plenty of lemon. Light effort, full dinner.

Method
Heat and prepare
Heat the oven to 200°C (400°F). Wash and trim the green beans. Toss with half the oil and half the salt on a lined tray; roast for 8 minutes.
Season the salmon
Keep raw fish separate from the vegetables and use clean utensils. Place salmon on a second lined tray. Brush with remaining oil, minced garlic, half the lemon juice, remaining salt and pepper.
Roast until safe
Put salmon in the oven and continue roasting the beans. Salmon usually takes 12–18 minutes depending on thickness. Check the thickest part of each fillet with a food thermometer: fish must reach 70°C (158°F). Cook longer if needed.
Serve
Use clean utensils to plate the salmon and beans. Finish with chopped dill and the remaining lemon, cut into wedges.
