Method

Cook the orzo

Boil orzo in water with half the salt according to its package. Reserve 150 ml cooking water and drain.

Cook the shrimp

Pat thawed shrimp dry. Melt butter with oil over medium heat. Add shrimp in one layer and cook about 2–3 minutes per side, depending on size, until the thickest part reaches 74°C (165°F). Use clean utensils once cooked.

Add aromatics

Turn heat low, add minced garlic and stir for 30 seconds. Add orzo, juice and zest from half the washed lemon, chopped parsley and a splash of reserved water.

Serve

Season with remaining salt and pepper to taste. Serve with remaining lemon wedges.
