- Shiitake mushrooms250 g
- Garlic3 cloves

- Low sodium soy sauce2 tbsp
- Rice vinegar1 tsp

- Sesame oil1 tsp
- Neutral cooking oil1 tbsp

Method
Mix and prep
Whisk soy sauce, vinegar, sugar and 4 tbsp water. Wash scallions and slice; clean and slice mushrooms. Mince garlic.
Brown mushrooms
Heat neutral oil over medium-high heat. Cook mushrooms 7–9 minutes until golden. Add garlic and stir 30 seconds.
Cook the noodles
Cook noodles according to their package, then drain. Add to the mushrooms with the sauce. Toss over medium-high heat for 2–3 minutes until hot, adding water if needed.
Finish
Turn off heat. Stir in sesame oil and top with scallions.
