
Soy-Simmered Beef & Onion Rice Bowls
A gyudon-style rice bowl: thinly shaved beef and sweet onions gently simmered in a savoury-sweet dashi, soy and mirin broth, spooned over steaming rice with green onion and pickled ginger.

- Thinly shaved beef (ribeye or sirloin)500 g
- Onions2 whole
- Water250 ml
- Instant dashi granules1 tsp
- Soy sauce60 ml
- Mirin60 ml
- Sake or water2 tbsp
- Granulated sugar1 tbsp
- Fresh ginger15 g
- Japanese short-grain rice300 g
- Water, for the rice360 ml
- Green onions2 whole
- Pickled red ginger, optional2 tbsp
- Shichimi togarashi or chili flakes0.5 tsp

Method
Start the rice
Rinse the rice until the water runs almost clear, then cook it with the 360 ml water: bring to a boil, cover, cook on low for 15 minutes and rest, covered, for 10 minutes.
Make the simmering broth
In a wide, shallow pan, combine the 250 ml water, dashi granules, soy sauce, mirin, sake, sugar and the ginger cut into fine matchsticks. Bring to a simmer.
Soften the onions
Cut the onions into 1 cm wedges, add them to the broth and simmer for 8–10 minutes, until soft and translucent.
Simmer the beef until done
Pull the beef slices apart and lay them into the simmering broth. Cook for 3–4 minutes, gently separating them and skimming off any grey foam, until no pink remains. Shaved slices this thin are cooked well past the 63°C (145°F) safe minimum by then. Wash your hands after handling the raw beef.
Serve
Fill 4 deep bowls with rice. Spoon over the beef and onions with a few spoonfuls of the broth so it soaks into the rice. Top with sliced green onions, pickled ginger and a pinch of shichimi.
Shaved beef for hot pot is sold in many Asian grocery stores. To slice your own, freeze a piece of sirloin for 30 minutes until firm and cut it as thinly as you can across the grain.
