Method
Toast the bread
Heat the oven to 200°C (400°F). Cut the half baguette into eight diagonal slices. Place on a tray and bake for 7–9 minutes, turning once, until the surfaces are crisp. You can prepare both toppings while the bread bakes.
Mash the beans
Drain and rinse the canned white beans, then weigh out 240 g; the amount is drained weight. Finely grate the garlic and chop the parsley. Mash the beans with the garlic, 1 tbsp oil, vinegar and half the salt. Leave a few beans partly intact for texture.
Grate the tomatoes
Wash the tomatoes, halve them and grate their cut faces on the coarse side of a box grater over a bowl, stopping before your fingers reach the skin. Discard the skins. If a puddle forms, spoon off just the thin liquid. Stir the pulp with the remaining oil and salt, the pepper and half the parsley.
Build the toasts
Spread the warm toast with the bean mash. Spoon the tomato mixture on top and scatter over the remaining parsley. Serve two pieces per person straight away; adding tomato early softens the bread.
Use ripe tomatoes that give a little when gently pressed. The bean layer helps the toast carry the juicy topping.
