Prepare the orange

Wash and dry the orange. Finely grate 0.5 tsp zest, avoiding the white pith. Peel the fruit, remove visible pith and cut the flesh into small pieces, discarding seeds.

Whip the ricotta

Drain off any loose whey. Put ricotta, icing sugar, vanilla and measured zest in a small food processor. Blend for 45–60 seconds until light and smooth, scraping the sides once. Do not add the orange juice, which would thin it.

Layer the cups

Divide half the orange pieces between two small glasses. Spoon in the ricotta cream, then add the remaining orange. Finely shave chocolate over each cup. Serve immediately or cover and refrigerate until serving.

Ricotta varies in moisture. Drain a wet tub in a fine sieve for 10 minutes before blending.
