Allergen notes

Sesame (tahini) and wheat (pita). Check canned chickpea labels for other allergens.

Method

1

Blend the chickpeas

Drain the chickpeas and rinse them. Peel the garlic. Juice the lemons. In a food processor, blend the chickpeas, tahini, lemon juice, garlic, cumin, salt and 2 tbsp of the olive oil until the paste is thick. Add the water a spoonful at a time, blending, until the hummus is smooth and spoonable. Taste and add a pinch more salt if it is flat.

2

Warm the pita

Heat a dry skillet over medium heat. Warm each pita for about 30 seconds per side, until soft and lightly toasted in spots. Cut into wedges and wrap in a clean towel so they stay warm.

3

Finish and serve

Spoon the hummus into a shallow bowl. Make a well in the centre and pour in the remaining olive oil. Dust with paprika and sumac and scatter with chopped parsley. Serve straight away with the warm pita.

If the hummus tastes dull, it usually needs more lemon or salt, not more oil. Cold tahini blends more smoothly if you loosen it with the lemon juice before the chickpeas go in.
