Method
Roast the peppers
Heat the oven to 220°C (425°F). Set the peppers on a tray and roast for 25–30 minutes, turning twice, until the skins are blistered and black in patches. Transfer them to a bowl, cover, and leave for 10 minutes. Peel off the skins, pull out the seeds and stems, and let the peppers drain so the dip is not watery.
Toast the walnuts and blend
While the peppers roast, toast the walnuts in a dry skillet over medium heat for 3–4 minutes, until they smell nutty. Reserve 1 tbsp of walnut pieces for the top. Pulse the rest with the peppers, pomegranate molasses, 2 tbsp of the olive oil, garlic, cumin, chili flakes, lemon juice and salt until the dip is coarse, not a smooth puree. You should still see flecks of walnut.
Warm the bread and serve
Warm the pitas in a dry skillet for about 30 seconds per side and cut them into wedges. Spoon the dip into a bowl, drizzle with the remaining olive oil, and scatter with the reserved walnuts and chopped parsley.
Drain the peppers well. Water left in the bowl makes the dip pale and loose. Toast the walnuts only until fragrant; past that they turn bitter.
