Method
Prepare the vegetables
Finely dice the onion and mince the garlic. Wash and drain the spinach well, unless the package says it is ready to eat. Drain and rinse the chickpeas, weighing out 240 g after draining. Roughly crush a quarter of them with a fork.
Build a fragrant base
Heat the oil in a wide skillet over medium heat. Soften the onion for 6–7 minutes. Add the garlic, cumin and paprika and stir for 30 seconds. Add the tomato paste and stir for another 30 seconds, without letting the spices blacken.
Simmer the chickpeas
Add all the chickpeas, the measured water, salt and pepper. Simmer gently for 6–8 minutes, stirring occasionally, until the crushed beans make a light sauce. Add spinach in two or three handfuls, turning each into the hot sauce before adding the next. Cook for 3–4 minutes, until wilted and hot throughout.
Finish with vinegar
Stir in the vinegar and take the pan off the heat. Divide into four small warm bowls, with the sauce spooned over the beans. Serve immediately.
Crushing some chickpeas thickens the small amount of sauce without bread or flour.
