
Sesame Bulgogi Beef with Rice
Thinly shaved beef marinated with grated Asian pear, soy, garlic and sesame, then seared hot and piled over short-grain rice. Sweet at the edges, savoury in the middle, and quick once the meat has sat.

- Asian pear1 whole
- Soy sauce4 tbsp
- Garlic4 clove
- Fresh ginger15 g
- Brown sugar1 tbsp
- Toasted sesame oil1 tbsp
- Green onions3 whole
- Sesame seeds1 tbsp

- Short-grain rice300 g
- Water, for the rice360 ml
- Neutral oil1 tbsp

Method
Marinate the beef
Peel and grate the Asian pear. Stir it with the soy sauce, grated garlic, grated ginger, brown sugar, sesame oil, half the sesame seeds and the pepper. Add the beef and toss until every slice is coated. Cover and refrigerate for 20 minutes. Wash your hands and board after handling raw beef.
Cook the rice
Rinse the rice until the water runs almost clear. Put it in a saucepan with the 360 ml water, bring to a boil, then cover, turn the heat to low and cook for 15 minutes. Turn off the heat and leave it covered for 10 minutes.
Sear the beef
Heat the neutral oil in a large skillet over high heat until it shimmers. Add the beef in a single layer, with its marinade, and cook without crowding, in two batches if needed. Stir for 2–3 minutes, until the slices are browned and no longer pink. Thin shaved beef cooks past Health Canada’s 63°C (145°F) minimum for beef steaks as soon as it is browned through; if a thicker piece remains, check it with a thermometer before serving.
Serve
Slice the green onions. Fluff the rice into bowls, pile the beef on top with the pan juices, and finish with the green onions and remaining sesame seeds.
Partially freezing the beef for 20 minutes makes it easier to shave at home if you cannot buy it already sliced. Pat very wet slices dry before they hit the pan so they sear instead of steam.
