Spicy Dakgalbi Chicken with Cabbage

Method

Mix the sauce and start the rice

Stir the gochujang, gochugaru, soy sauce, honey, grated garlic, grated ginger and 80 ml water. Rinse and cook the rice with the 360 ml water: boil, cover, 15 minutes on low, then 10 minutes resting off the heat.

Cut everything

Cut the chicken into 3 cm pieces. Cut the napa into bite-sized pieces, slice the onion, and peel and slice the sweet potato into half-moons about 5 mm thick. Slice the green onions and keep them separate. Wash your hands and board after the raw chicken.

Simmer until the chicken is safe

Put the chicken, sweet potato, onion and sauce in a large deep skillet over medium-high heat. Bring to a simmer, cover and cook for 8 minutes. Health Canada’s safe internal temperature for poultry pieces is 74°C (165°F): check the largest piece. Continue cooking if it is below that.

Wilt the cabbage

Stir in the napa, cover and cook for 4–5 minutes, until the cabbage is tender and the sauce is thick enough to coat the chicken. Stir in the sesame oil and most of the green onions.

Serve

Spoon rice into bowls and top with the chicken and vegetables. Finish with the remaining green onions and the sesame seeds.

Sweet potato should be just tender, not collapsing. If the pan looks dry before the chicken hits 74°C, add another splash of water and keep the lid on.
