
Gochujang Pork Belly Stir-Fry
Skin-on pork belly sliced thin, rendered until the edges crisp, then tossed with onion, gochujang and sesame. Sticky, spicy and rich, served over a bowl of short-grain rice.

Method
Slice and start the rice
Slice the pork belly across the grain into strips about 5 mm thick. Rinse the rice, then cook it with the 360 ml water: boil, cover, 15 minutes on low, then 10 minutes off the heat. Wash your hands and board after handling raw pork.
Mix the sauce
Stir the gochujang, soy sauce, honey, gochugaru, grated garlic and grated ginger in a small bowl. Slice the onion and green onions.
Render the pork
Heat the neutral oil in a large skillet over medium heat. Add the pork in a single layer and cook for 8–10 minutes, stirring now and then, until the fat renders and the edges are golden. Spoon off all but about 1 tbsp of the fat.
Sauce it until safe
Add the onion and cook for 2 minutes, until softened. Pour in the sauce and toss for 2–3 minutes, until the pork is coated and glossy. Health Canada’s safe temperature for pork is 71°C (160°F): check a thicker strip in the centre. Stir in the sesame oil and most of the green onions.
Serve
Spoon the rice into bowls, top with the pork and finish with the remaining green onions and the sesame seeds.
If the belly is very fatty, give it the full render before the sauce goes in. The honey burns quickly, so keep the pan at medium once the sauce is added.
