
Vegetable Bibimbap with Fried Egg
Warm rice topped with seasoned spinach, carrot, zucchini, mushrooms and bean sprouts, a fried egg and a spoon of gochujang. Stir it together at the table so every bite gets a little of each.

Method
Cook the rice
Rinse the rice and cook it with the 360 ml water: boil, cover, 15 minutes on low, then 10 minutes off the heat. Keep it covered.
Season the vegetables separately
Blanch the spinach for 30 seconds, rinse, squeeze dry and toss with half the garlic (grated), 1 tsp soy sauce and 1 tsp sesame oil. Cut the carrot and zucchini into matchsticks, and slice the shiitakes. Sprinkle each vegetable with a pinch of the salt.
Cook the vegetables
Heat 1 tsp neutral oil in a skillet over medium-high heat. Stir-fry the carrot for 2 minutes and set it aside. Repeat with the zucchini, then the mushrooms with the remaining garlic, and finally the bean sprouts for 1 minute. Keep each pile separate so the colours stay distinct.
Fry the eggs
Add the remaining oil to the skillet. Fry the eggs until the whites are fully set. Health Canada advises cooking eggs until the white and yolk are firm. For a set white and a jammy yolk, fry for 2–3 minutes; for anyone pregnant, elderly, very young or immunocompromised, cook until the yolk is firm as well.
Assemble and mix
Divide the rice between 4 bowls. Arrange the vegetables in sections on top, add an egg, a spoon of gochujang, the remaining sesame oil and soy sauce, and the sesame seeds. Stir everything together before eating.
Cooking the vegetables one at a time is what keeps the bowl colourful. A single mixed stir-fry tastes fine and looks muddy.
